Shrimp with Zucchini Carpaccio
serves 4
Ingredients
- 1 lb shrimp, cooked and cooled
- 2 ea zucchini, sliced paper thin, rolled into cones.
- 4 C mixed greens
- 2 T olive oil
- 1 T lemon juice
- 2 T Balsamic glaze
- 16 ea mozzarella pearls
Instructions
- Whisk together the olive oil and lemon juice, season to taste, then toss with the greens.
- Plate the greens in a bowl, place the rolled zucchini around the edges of the bowl with the mozzarella pearls inside the cones, dress with the glaze, plate the shrimp on the greens.
- Serve chilled.
